like another user said, I love how often they show the mistakes made and it's one of the major reasons I tune in, but out of curiosity, when she dumped the pan and started over, did it take away any flavor when she deglazed the second time? I know shrimp cook very quickly and don't produce many brown bits like chicken or beef, but would it change any of the flavor at the end? I cook all the time and I will do anything to avoid starting over.. which is why I do not bake

scampi=langustine. Wha you made is simply a base fish/seefood sauce with shrimps, we call it "sugo ai gamberi" but in the same base you can literally dump whatever comes out of the sea.

I love that other people agree that angel hair pasta is the worst pasta. Has an awful mouth-feel to it and is one of the reasons I went so long thinking that I hated spaghetti, when really I just hated the type of noodle that my mom used :P

Everything turned out great, however, before I added the shrimp at the final step, after 2 minutes there were what appeared to be burned garlic “mats” sitting on top of the sauce. I absolutely had to remove them prior to adding the shrimp. I did use a garlic press which may be responsible, although it seems that the grating that Carla did would possibly leave the same sized garlic bits. I did use medium heat. The burned garlic issue happened during the reduction process.. What am I doing wrong?

For me, angel hair pasta doesn't have enough surface area for sauces to cling to it and is so delicate I have to babysit it to get it right. If I do get distracted by a shiny object, it becomes a sticky tangled mess. I've tried putting a bit of oil in the water but then sauces slide right off it. It just isn't worth it to me. GIVE ME LINGUINE OR GIVE ME DEATH!

The correct way to do it is to put olive oil (quite a lot of it) in a cold sauce pan and the shrimp too so they are imersed in the cold oil with the garlic slices, the shrimp must cook together with the oil, when the shrimp is cooked the recipe is done. And then there's a lot of oil to eat the bread with. Scampi just means shrimp.

My mom made delicious shrimp scampi. She passed away a few years ago and as hard as I tried mine just never came out good. I made this BA recipe and it is absolutely delicious!!! I'm now completely spoiled, and can't have shrimp scampi from a restaurant anymore. One suggestion, buy pre 'de-veined' shrimp (if there is even such a thing???). I spent most of the time cleaning the shrimp, everything else was really simple. I concur, Angel Hair pasta is the devil! Lol!
