For frying an egg I use butter but on a much lower heat, spooning the melted butter over the yolk until it turns pink, just like my mum used to make them for us.

With the poached eggs, I find it easier if I just let the egg go undisturbed once it's in the water. Even if it looks like the yolk is separating from the white, I find that meddling around with your spoon just makes it worse.

Sometimes I feel like I'm the only person who doesn't like runny eggs. I don't want it soft at all. I usually cook some veggies (leeks, bell peppers, whatever is in my fridge) in a little butter and then scramble the eggs right into it. I sometimes do it with no fat at all if I'm cooking in my ceramic-coated pans, but butter gives it a nice flavor. I probably won't find a single chef who agrees with me, but hell, it's my breakfast LOL

Salt should be added when curds first start to form in scrambled eggs. If you do it before, the salt will pull moisture from the eggs and dry them out.

I don't eat poached eggs; I like my sunny side up with almost completely raw yolk but well done whites(I don't like it when it looks like snot) and I like the delicious crispy lace at the edges. Omelette looks extremely appealing but I never had one that matched what I see(I see a dish that looks like it tastes amazing, but when I eat it it's very disappointing). And the way I make my scrambled is like this: I break 2-3 whole eggs in the hot pan and gently push the egg whites from the edges towards the center of the pan, so they don't stick and get cooked well; this whole time I make sure the yolks don't break(if the eggs are fresh they won't break), then when the whites are completely cooked I gather the yolks on top of the whites and in the center and pinch them open, I don't touch them for 4-5 seconds, letting the yolks cover the cooked whites and then they're done! The result is: fluffy well cooked whites covered in creamy delicious yolk. I love them! Sometimes I fry finely minced onion and bacon or sausage slices before adding the eggs in the pan and right before I pinch the yolks I add a little bit of cheese(that melts). It has a yummy rustic flavor and it's a very satisfying meal. (I could just add the egg parts separately in the pan, but I like keeping the yolks there in high heat to kill possible bacteria and to warm them up. In case you were wondering...)

I've tried making poached eggs so many different ways for years and it never works. Vinegar, no vinegar, swirl, no swirl, deep pot or skillet, turn heat off or keep it going, it just never works. :(

Trust me, the trick is to spin the water a long time like she does so that the water is all moving evenly and carries lots of momentum. A short stir will appear to spin the water enough but you want to get it all moving uniformly. The other important thing is to drop it like she does, already opened in a dish and dropped from very very low just over the surface of the water. Keep trying, it's just a subtle tough skill to learn!

1 medium egg without oil or butter = 62% cholesterol body needs in a day. 2 makes it go 125%. Oil, butter pulls it up to 200% and mind you thats just 2 eggs & nothing else at all. Whenever you cook an egg, keep a jumbo piggy bank on your kitchen table and add a dollar everytime for every plate of egg served.. That you will need to pay off your ballooning medical bills, when you grow up and suffer from 1/2 dozen heart diseases, owing to middle aged greed. Btw the general people are like mindless sheeps, whom the rich class keep fooled and controlled and make them sustain their 1000% profit making drug corporations, by making them subscribe to their ill-promoted wrong ideas. Use a paper towel, lay it on the edge of the plate you're serving on, put half the omelet on the plate and half on the towel, use the towel to roll it. Works everytime!

I personally like my scrambled eggs differently. I prefer not stirring the egg white and the yolk together beforehand, because that makes it taste kind of like an omelette. I put the egg in an oiled pan with some milk and then stir to scramble it. I feel like the milk gives it a soft and almost squishy texture. Plus this way it has the (to me) significant scrambled eggs taste, that I like so much! But of course everyone has their own ways and preferences!

I feel like the omelette could've used a bit more time in the pan. Baking it for just a little bit longer would've given it more color, texture and easier to flip/roll because it's stronger. They all looked delicious though

My own made scrambled are ALWAYS consistently " folded " in the pan until done and not ever do I " Whip " mine in a bowl, but rather cracked straight into the pan on medium low. Perfect every time.

I’m sorry but no. Nothing was completely cooked. Not even the scrambled at least that has to be completely cooked. You can see the liquid on top of the eggs. That’s how people get sicknesses because the eggs are not well cooked.

Well, today I learned to make a proper fried egg. I've always used butter/margarine. From now on, lots of oil. Even spooning it atop the egg. Interesting. I assumed the oil is vegetable, but she mentioned olive. Wouldn't EVOO provide too strong of a flavor? Time to experiment. Also, what's the pan temperature? I use an infrared temp gauge to control heat. I learned to make omelettes from Jacques Pepin. Love ya, Miss Carla, but I'm going with the French guy.

I want so badly to like runny scrambled eggs and omelets... but I will NEVER understand how anyone likes eggs that spectacularly under-cooked. I know it's the "right" way to do it, but if you're beating eggs they should be COOKED. "Dog drool"????? Neither the name, the texture, nor the presentation are in any way appetizing.

In culinary school they teach it that way because the eggs will keep cooking after you take them off the pan. It’s very easy to overcook and get rubbery eggs.

I CANNOT BELIEVE YOU DID NOT THESE THINGS: hard boiled eggs soft boiled eggs and finally my fav recipe of all eggs: baking an egg I'm not crazy, it tastes delicious recipe: u crack 1 or more eggs into a bowl(i do two) add seasoning(salt, pepper, Italian seasoning) bake until the top is completely cooked and has like little crusts on the edges poke through the surface and see if the yolk is still runny by the white is completely done. voila

I have the luxury of fresh eggs from my lovely girls, so when i poach an egg I use an egg that's been laid that day (tbh i don't chill my eggs so they stay good for poaching for a lot longer). I just crack it into a mug, and gently add it to well salted rapidly boiling water until the white is firm and the yoke is still soft. I also NEVER use cold eggs, every time I've used a cold egg it's not worked.
