    This experiment was asked by most subscribers of this channel. I am against this product but I decided to create this video so we can have an open discussion on Meat Glue AKA Transglutaminase and see how most people feel about it. I love to know your opinion and how you would use this product.

Let me clarify this experiment as many are not understanding what it's about. This experiment is about meat glue. Not about seasoning one inside and not the other. The comparison in the end is very clear that meat glue works. It does what it's suppose to do! The fact that I am not ok using this product is my personal choice. I know the meat industry, many chefs, butchers, restaurants and many others use it AND I RESPECT THEM! However, It still does not change my opinion that I don't want to use it! Now I want to know if you are ok using it? if so why do you feel its necessary to use it, appearances only? Let me know on the comments below.

It would be cool if you used the meat glue to mix a bunch of different meats together, so you can have a beef-chicken-salmon-pork piece of meat. I'm sure it would be harder to make it taste good or cook it, but it would be interesting to see.

I say (for me) the fewer chemicals, and processes, the better. Simplify, simplify. An apple is better for you than an apple pie. An apple pie with a whole bunch of stabilizing chemicals is worse than the pie from your kitchen. Meat goo is unnecessary, and probably NOT going to make you healthier.

Sounds like the main issue is the chef possibly breathing it. I might have gone with a painters mask that makes a good seal around the face. That said, I can't think of a reason I would ever need to use it at home. the butchers twine method is obviously seasoned all the way through, so I'd much rather eat that

salt is the reason i don't eat out. i use it in baking and that's about it. i don't think it intensifies the flavor of foods, for me it covers up the flavors. those steaks look mighty delicious.

*Morally* it should never be used if the person consuming it is not aware its used in their meat. It should not be used at any restaurunt at all, for the price of dining no corners should be cut and no deception. *When is it ok to use?* At home for personal use if you feel the need. IN my opinion this meat glue should never be used . But if it is used for lesser quality meats it should be labeled as such, just like any other processed meat is labeled as processed meat....However , if I go to buy a nice steak to grill , I make sure its a actual piece of meat and not some glued together crap.. a real steak can not be duplicated in any way. If you cant tell the difference than you don't know what a steak should really taste like .. I feel sorry for those type of people

i've been reading , and i don't find ANYTHING agaisnt the product itself , there's no hard proof that links it with health problems , i'd totally use that and would advice people on using it , but when you get fake steaks without your knowledge , that's the problem , the product is fine . don't worry people , go and make giant steaks for fun and be responsible with temperatures , that's all

Salting the meat removes water and leaves the myoglobin(what ppl think is blood) behind. It also helps break down the fibers of the meat. Both leaves the meat very, very tender. I usually leave the sea or koscher salt for 15 minutes per 1/4". Makes for the best and most tender steaks. Don't worry, it does not leave your meat all salty, as long as you rinse it well.

It is a problem. I do not eat beef like I used tool once a week and it is Sirloin steak tips that's it. That is the only meat they cannot mess with. DO NOT USE THE STUFF. Do some homework on it.

I mean, it looks interesting considering how well it holds together. But I say...if it ain't broke, don't fix it. Learned something new though, thanks! I would avoid though. Just because I am more of a traditional guy. Nothing wrong with butchers twine. Personally, I don't wanna eat that meat glue stuff. But this is yet another reason why I don't like to go out to eat. It's a fun idea, sure. But why do it when you can have it twice as good and at half the cost, at home?

Give the 'Glue' is pretty much made form corn and several other natural enzymes from meat proteins or plant proteins it is pretty much a safe product. Unless you start mixing in a lot of chemicals or substitute the natural enzymes or proteins with petro-chemical synthetics, then you need to worry. It is like the difference between real butter and fake butter/margarine. I hate the fake stuff. Also, when you are cooking meat it should have an internal temperature that will kill e-coli, salmonella and other nasty parasites/viral bugs. 160 degrees will do that, but you can also keep the internal temp a little lower, will also kill the aforementioned bugs; you just have to leave them in the heat longer. Which can in some cases affect the food in tenderness, taste and appearance. Now as for the process, I feel if you have made the MOO GLOO meat in a flat or at least did a spiral cut, then seasoned/tied it the same way as the other intact roast, there would have been almost no discernible difference.

my opinion on it is this... i plan on cutting my meat up anyway.. so im happy to use the butchers twine to hold it together. i do not approve of using anything not needed ( it adds no taste, exc.) seasoning is one thing but adding a product just to hold the meat together? no thank you.

I would say that meat glue should be allowed but regulated. For instance butchers and stores need to label the meat that's containing glue and restaurants need to declare it in the menu that the product is containing glue. Thus letting people make their own choices about the subject matter. Kind of like gmo or ecological product. For the meat glue it self its not that harmful to eat. There is a small increase of getting blood clots. But you have a higher chance of developing blood related diseases from the meat than from the glue. I don't have a problem with meat glue but i do get why others do. But to let the government decide what you can and cannot eat is a step back in democracy.

Meat glue is completely natural, and is already in meat. The only issue I have is when stores or restaurants are passing a cheap cut of meat off as something better. As someone in the food industry, the only way I have seen this used is to bind together two pieces of meat after the fat has been removed, ensuring that customers get a consistent steak instead of having some steaks that are extremely lean while others may have a lot of fat. Without the glue you'll either waste a lot of good meat, or you'll have pieces of meat that aren't uniform in thickness, and therefore don't cook evenly. Using it creates a better experience for diners, while cutting down on food waste. But I've never seen the people I work for trying to pass off cheap meat as something more expensive, or combining any more than two pieces of meat with it.
