    This experiment was asked by most subscribers of this channel. I am against this product but I decided to create this video so we can have an open discussion on Meat Glue AKA Transglutaminase and see how most people feel about it. I love to know your opinion and how you would use this product.

Let me clarify this experiment as many are not understanding what it's about. This experiment is about meat glue. Not about seasoning one inside and not the other. The comparison in the end is very clear that meat glue works. It does what it's suppose to do! The fact that I am not ok using this product is my personal choice. I know the meat industry, many chefs, butchers, restaurants and many others use it AND I RESPECT THEM! However, It still does not change my opinion that I don't want to use it! Now I want to know if you are ok using it? if so why do you feel its necessary to use it, appearances only? Let me know on the comments below.

Meat glue is an interesting conversation because when people here meat glue they get terrified. But then they go on munching down on sausages like salami and other things that are not one cut of meat. I think many do just react to the name glue. If it is used to scam people its wrong otherwise its just used to make use of the whole animal minimizing waste by making bigger or more attractive pieces...

uneducated people tsk tsk.... meat glue isnt disgusting or lethal compound. how do u expect to make any roulade without RM????? SMDFH like many other ppl have pointed out, the only problem i have with meat glue / RM is some markets and restaurants will use RM to put together some meat thats cheap and sell it for way more than what it should cost to consumers. that i got problem with but as far as eating it, i got no problem wid it. matter of fact, i love making and eating chicken roulade often.

There is nothing wrong with meat glue as a product. It is merely better cooking through chemistry. It only becomes a problem when the product is used to deliberately deceive. Meat glue merely acts like a protein emulsifier, not unlike using an egg to hold meat balls together. Salt will also work as an emulsifier with beef mince if you leave it sit in the refrigerator over night. So you don't really need to add an egg if making meat balls. Meat glue is a very useful product for ensuring that none of the meat is wasted. Every scrap of meat can be collected and combined into a delicious meal. What should not be allowed is passing off a meat glued product as something it is not. That would be fraud. McDonald's does not claim that their chicken nuggets are made from chicken breasts or thighs, they just say its chicken. Which could include feet, feathers, and other "disjecta membra" of the chicken. When all ground up and mixed with meat glue you are not likely to be able to tell the difference, and that is not fraud. However, taking different cuts from a cow using meat glue to combine them into one piece of meat and then claiming they are a specific cut of beef, like a fillet Mignon, then that is a crime. Additionally, in the experiment I noticed that the meat glued roast was laid out differently than the tied roast. The grains the pieces of meat that were meat glued did not all run in the same direction, unlike the tied roast. Which could explain why the meat glued roast was slightly tougher to cut.

Eventhough I'm also against this product, Meat Glue should not be used as you use it. The "normal" dose is around 5 to 10g per kg of finish product. So, it look to me you are use much too much of it. Recommended use is dilution of those 5 to 10g with iced water (proportion of 1 to 4) and use it with a brush like real glue on parts you want to glue together. For debate, this product encourages intoxication because the surface of each meat cut may contains bacteries and glueing together meat cuts multiplies by around 100 the chances of intoxication. Specially when cooking rare or medium rare (with grill, not sous-vide which pasterurized the meat indeed) Moreover it is strongly NOT recommend to eat it RAW !! (cooking de-activate the enzyme) There is 2 different glue for meat and fish. It is normally forbidden in U.E since 2010 but one can buy it anyway. It is said to be roughly responsible of 76 millions of intoxications , 325 000 hospital admissions et 5 000 death in U.S per year !!!

I'll admit my problem with meat glue is that parts of the meat that are to be glued together were once on the outside... and therefore subject to bacteria, contamination, etc, there now on the inside. The only safe way to eat meat-glued meat is to cook the bejeezus out of it. I don't like my steaks that way. No meat glue here!

It is really not much different than making sausage. Once minced that surface meat gets mixed in with everything else and if the surface meat was contaminated then the entire mince will be contaminated. Which is why it is important to maintain a clean cooking environment and use quality products. If you use good quality meat, line up the grains of the meat correctly, and meat glue them together there is absolutely no reason why that would not make a perfectly delicious medium-rare steak or roast. Just don't try to pass a meat glued product off as anything other than what it is and there should not be a problem. As a hunter I can certainly find a use for meat glue. I do my best to harvest as much meat as possible, but there is always going to be some waste. With meat glue I can ensure that the waste is minimal and I improve my yield at the same time.

Both tender... "B" holds together without the twine... BUT!!!! "A" tasted better? I can't imagine why... oh wait... You seasoned "A" inside and out, as well as giving it a salt brine for an hour. Could that really give it more flavor than the one you only seasoned on the outside? Hmmm. Try it again, and give them both a FAIR chance! Only season the outside of each, with the same seasoning.

Yeah you can't breath it but the FDA passes it anyway, they just want us to die and don't care, it's called agenda 21 and it's happening as we speak. People really need to start standing up and demanding that we do not out our money and science/taxes into developing such things. Put it into bettering our country's not making them worse. You could try the food industry method which does work and uses no additives. its really simple, you get a tumbler which is like a huge cement mixer which mixes and chills your meat at the same time, leave it in there for 1-2 hours and a sticky residue will develop, tightly vac pack your meat and product will hold together. This works 100% on uncured beef, chicken, turkey, lamb, pork loin and cured ham alternatively Why not copy the reformed or forever ham method and make a slurry by blending the meat with some water and then mixing it with your meat before vac packing and cooking it.

If this product is available to be used by industry, you know they WILL use it and here is the issue, It needs to be PUBLICLY ADVERTISED ON THE PRODUCT so you can make an informed decision, period. FREE WILL is important, it may not make a difference, but it has to be available for the individual to make the choice. OMG, I personally would refuse to use it, I like as natural as possible.

I love meat made with meat glue. They have good tenderness that's not bounded to quality. And if they've been frozen before, then you can really eat it as raw as you want became there are no bacteria and parasite at frozen temp. Plus, they are very cheap!

The chemistry of meat glue is very interesting. Proteins are constituted primarily of amino acids, 2 of which are glutamine and lysine. Meat glue is simply an enzyme called transglutaminase which is endogenous to mammalian organisms, i.e. is synthesised by and found within the human body, notably involved in blood coagulation pathways. Meat glue/transglutaminase catalyses a reaction between glutamine and lysine residues present on proteins at the meat interface, [ Gln-(C=O)NH2 + RNH2 → Gln-(C=O)NHR + NH3 ] for those interested in the technicalities. This reaction "crosslinks" meat in the solid state creating a uniform and for the most part homogeneous cut of meat, very smart. Whilst I have no strong scientific basis to form this prediction, it is likely that the recommendation not to inhale the product is due to its potential crosslinking of proteins presented at your bodies interfaces, for example crosslinking alveoli in the lungs, epithelia in the throat or nose etc. This may cause acute symptoms, most poignantly breathing issues, however purely based on the reaction being undertaken, I would infer these symptoms would likely subside quickly. In terms of digesting the product through your stomach (i.e. eating it in your cut of meat) this would not be an issue due to acid and peptidase enzymes in the stomach which would break down/denature the enzyme before it became an issue in your gastrointestinal tract. I have seen comments elsewhere that the major concern would be that the bacteria presented at the surface of the meat will become integrated in to core of the meat when using the glue, and thus may not be "killed" when cooking the meat rare. However we may take the analogy of mince meat, sold with a high surface area for bacteria to "thrive", however we don't often hear individuals getting ill from rare burger patties - thus anecdotally I would not suggest this to be a major issue with the glue. I personally find the glue fascinating and certainly an excellent opportunity more than anything. I do not under any circumstances condone the use of the meat glue to fabricate high quality cuts of meat, and I can see clearly why this is an issue for the meat industry. However, the concept of creating meat hybrids using this product, for example between venison and beef, extremely intriguing; so long as to be completely transparent its use. I would love to see you experiment with meat hybrids using this product, and to be open minded about the outcomes rather than to have a pre-disposed tainted opinion on them simply due to the ambiguity around what the product is and how it works. This product is an amazing opportunity, not a scary Frankenstein chemical!

They do use meat glue for pork, when you have a lean product to add to more thickness so you add 2 or 3 pieces together like prosciutto. thank for informing the public. I'm in culinary arts program and I have used the glue to make stuff, It's approved by the FDA. I haven't seen it used for beef only in pork. Be well guys.

You should have used Jay's recipe on both roasts. I think that if meat glue is used, it should indicate so on the package. Its always best to buy the cuts of meat from the meat case and not a processed meat product.

You mistyped the Celsius temprature at 4:52, it should be 57.2°C, not 52.7°C. This should be changed immediately, 52.7°C is outright dangerous, and I can assure you the rest of the world will NOT catch this from the Fahrenheit value. We have a vague idea how much an inch is, but Fahrenheit is just beyond.

Isn't that the same stuff they use to make deli meat? Also you can't get a good comparison on a blind taste taste unless you season both cuts the same way. Of course they will say the one with the twine taste better because it is seasoned and the other is not.

I am in agreement with guga. I don’t use it period. That’s is why my family raises our own beef and have it butchered by a family friend who owns a butcher shop. I know exactly what is being done to my beef. Never do we buy store bought meat for this exact problem. General public has no idea what is in their beef they are buying and consuming. Do some research find out for yourself what goes into the diets of cattle what is being done during the process from hoof to plate. You will be amazed on what you discover for yourself first hand.

The best comparison would have been to not season the meat until both are formed. With that being said, i never even heard of this meat glue stuff until now. There should be warnings that this stuff is being used on menus, kinda like peanut allergy warnings.

I probably hate IDEA of meat glue. Its purpose is to fake something. Same way I hate food coloring, so that your food would look something it isn't. Same way I hate Hollywood stars faking their youth with plastic surgery.

I've had it in fancy restaurants used to make interesting combinations and shapes out of meat. for 'art' i will approve of its use. for every day food and to pass of crap as better quality, that's a no.
